CHARLES LAQUIDARA
SICILIAN ROAST POTATOES
(handed down from Charles' father, John "Trippy" Laquidara
- and Charles' brothers - from an old family recipe)

Five or six good-size Idaho or russet potatoes, peeled.
- canola or olive oil.
- two washed, unpeeled onions.
- ground black pepper.
- paprika.
- rosemary.
- dry minced garlic.
- Mrs. Dash garlic/herb seasoning.
- Italian seasonings.

3 bay leaves.
Quarter and halve potatoes; cover bottom of broiler pan
with 1/4 to 1/2 inch oil. Place potatoes and unpeeled onions
in pan; sprinkle heavily with black pepper, rosemary,
and Italian seasoning. Sprinkle lightly with garlic and Mrs. Dash.
Cover all potatoes with light coating of paprika. Add bay
leaves, and bake at 375 degrees for about 45 minutes, carefully
TURNING EVERY 15 MINUTES. Turn temperature up to 400 degrees
and cook for 15 minutes, or until golden brown.
